The first wonderful fruity course was something simple: fruit salad.
Ingredients: fresh pineapple, grapefruit, and sliced grapes.
The main course was home-made pineapple bacon pizza with a healthy amount of cheese. The pizza dough was made from scratch and the sauce was plain tomato sauce that we spiced up.
Ingredients: crust white flour, whole wheat flour, soy flour; sauce tomato sauce, onion, oregano, fresh basil, red pepper flakes; toppings grated mozzarella cheese, pineapple, bacon, fresh basil.
Finally, the dessert: pineapple cheesecake bars. This was a more complicated process, creating a three-layer confection. Again we used fresh pineapple: first blended with ricotta and cream cheese for the filling, and second crushed in fruit topping. The bottom layer was a crust made from crushed graham crackers and granola.
Ingredients: crust graham crackers, granola, honey, vegetable oil, cinnamon, nutmeg; filling ricotta, cream cheese, eggs, pineapple, sugar, vanilla; topping crushed pineapple and juice, water, sugar, flour, shredded coconut.
The finished meal. For those of you who missed it, it was delicious.

Question - Does this meal meet hippy certification? First, please note the use of soy flour. Second, several of the ingredients were purchased at the local food co-op. Third, our main ingredient, pineapple, was organic, as were several other ingredients. Finally, the biodegradable refuse (see below) was added to our compost pile in the back yard.
